Cheese Cake Mix cupcakes
 This is it, i made it! 31 cupcakes in 31 days, woot!
My husband and I are leaving tomorrow for New York to visit for his 30th birthday, so I decided to make something he loves and semi-New York themed.


  I made a buttery thin graham cracker crust at the bottom of each cup, i then made some home made cheesecake filling from the usual eggs, cream cheese, sugar, vanilla, flour. For variety to each cupcake i added caramel, chocolate strawberry and left some plain for kicks!


All in all they turned out great! (my husband sure loves them!) Thank you for visiting on this 31 cupcake journey!

Apple Walnut cupcakes
It is hard to believe that my 31 cupcakes projects is almost over. 
Tonight i made a yellow cinnamon batter mix with chopped apple bits,and walnuts. I added  pinch more of cinnamon when baked for a sweet sweet smell, Yum!

Cinnamon Swirl cupcakes
Tonight i made a simple yellow batter cake mixed in with some cinnamon/brown sugar mix, after baking i had a toasty topped cupcake with a cinnamon kick (next time i will add a sugar glaze to the top for a cinnamon roll taste!) Yum!

Tonight I made a simple chocolate cake topped with a marshmallow puff oreo topping (also can be used as filling) and cookie crumbles, Yum!

In need of a little pick me up? Tonight I made a Chocolate and Espresso batter cupcake, topped with a dollop of whipped cream, mini chocolate chips  and caramel, Yum!

Tonight I played around with a  sweet honey concept mixed into a yellow cake and chopped nut batter, after baking i received a tasty toasted treat, that i sprinkled with some cinnamon, Yum!

Tonight I was feeling creative so i made a mix of watermelon and chocolate chips in white cupcake (the chips represents the seeds :)) i then made a glaze topping out of the remaining watermelon, Yum!

May 23rd (Day 23) 

Coca Cola Delight Cupcake
One can of Coke goes a long way. The cupcake batter was mixed with coke to create a sweet fluffy yellow cupcake. I then mixed the rest of the coke into a homemade chocolate,and powdered sugar frosting, let it cool overnight, then added some colored sprinkles, Yum!

Life tastes good!

Double M&M's
Tonight's cupcake was another yellow cake baked in with mini m&ms (reeses pieces will work too!) Then a chocolate swirl topping with a few more mini m&ms, Yum!

 Tonight i made a light yellow cake overfilled with strawberry pieces and whipped cream in the center, then I re-topped it with its center cake and lightly sprinkled powdered sugar, Yum!

 No ice cream? no problem. Tonight a fluffy chocolate cake simply topped with marshmallows, chocolate sprinkles (or chocolate chips) and nuts, Yum!

Based off the popular whoopie pies snacks, I made a chocolate cake, cut it in half (after cooling a bit) and placed some home made frosting and marshmallow creme icing mix inside, Yum!

Boston Cream Pie Cupcakes
Another sweet yellow cake mix cupcake. I cut a hole from the top with a fondant cutter and filled the cupcake with Vanilla pudding, then drizzled some milk chocolate over the top to finish it off, Yum!
